I am one of the many people who uses Force.com plugin in Eclipse for development and deployment.
One day while trying to deploy some pieces of components, I found that there are some missing/unavailable metadata components to select from Add/Remove Metadata window. I was surprised and due to lack of time, I moved on using changesets for a while, but I was intermittently looking for getting such features back into my eclipse. I believe many people would have faced this issue before.
With lots of exploration into discussion forums and blogs, I finally come across one where I find this easy solution to this issue.

- Close Eclipse
- Uninstall JDK/JRE from your system
- Install JDK/JRE again
- Open Eclipse
- Visit Add/Remove Metadata window
- Search for your components like Custom fields, Validation rules under Custom Object
